I have recently been having some problems with sending email from my Exchange 2000 server. I finally decided to call up MS support. They haven't solved the issue yet but I did learn a few things. Firstly, rather than using the W3C log format you should use the NCSA format. The latter has more data columns that are specific (like sender.)
I also learned that it is possible to turn the SMTP logging up even higher than the maximum available through the Exchange MMC logging dialogs. To do this navigate to the HKEY_LOCAL_MACHINE/System/CurrentControlSet/Services/MSExchangeTransport/Diagnostics registry key and set the various items to 7. (The maximum available via the Exchange MMC dialogs is 5.
